Martin Heierling, the chef behind Bellagio's Sensi, serves as executive chef of Silk Road in the Vdara Hotel & Spa at CityCenter. The restaurant is inspired by the trade route spanning from Venice to the Far East and incorporates spices and exotic ingredients in its modern "trans-ethnic" cuisine. ARIA Resort & Casino at CityCenter is offering a myriad of dining options. Chef Shawn McClain, who already has Spring, Green Zebra and Custom House in Chicago, has opened Sage, a contemporary American restaurant that takes some influence from his previous three restaurants and highlights farm-to-table produce and sustainable seafood. Modern Japanese pioneer Masayoshi Takayama is opening a more casual Bar Masa concept along with Shaboo, an elegant take on Japanese shabu shabu dining. There are also new venues from veteran Vegas restaurateurs Sirio Maccioni (Sirio Ristorante), Michael Mina (American Fish), Jean-Georges Vongerichten (Jean Georges Steakhouse), Jean Philippe Maury (JP Patisserie) and Julian Serrano (Julian Serrano). Meanwhile, The Light Group has unveiled Union Restaurant & Lounge, offering contemporary American cuisine. Firefly on Paradise has opened a second location at The Plaza Hotel & Casino downtown. Firefly Kitchen & Bar's tapas menu features dishes like bacon-wrapped stuffed dates, shrimp skewers, and filet mignon sliders topped with Serrano ham, Cabrales cheese and caramelized onions, while the drinks selection includes sangria, flavored mojitos, specialty cocktails and a short list of wines by the glass. The Monte Carlo Pub & Brewery in the Monte Carlo Resort & Casino has re-opened as The Pub at Monte Carlo. The new menu features flatbread pizzas, more than a dozen specialty burgers, and spiked milkshakes. More than 50 beers are available on tap. Lunch & Dinner daily.
