Blue Ribbon, from chefs-restaurateurs Bruce and Eric Bromberg, has opened at The Cosmopolitan of Las Vegas in the space of the former Blue Ribbon Sushi Bar & Grill, which closed earlier in 2017. The restaurant brings the vision of American cuisine the two brothers originated 25 years ago when they opened their establishment of the same name in SoHo. Many of the design elements mirror the original NYC spot, including lighting with a sea of chandeliers, classic mahogany bar and tables and banquette fabrics. The menu lists favorites from the SoHo location, such as beef marrow and oxtail marmalade, a pupu platter and pan-roasted skate with crispy potatoes, shrimp and bacon. New additions exclusive to the Vegas outpost comprise bourbon-glazed prime rib of pork and The Cosmopolitan, a multi-tiered shellfish and caviar extravaganza served with a bottle of Champagne. Blue Ribbon is open daily for dinner and late-night dining. Blue Ribbon, The Cosmopolitan of Las Vegas, 3708 Las Vegas Blvd. S., Las Vegas, NV 89109, 702-698-7000.
