Openings

William B’s Steakhouse, named for Boyd Gaming’s co-founder William “Bill” Boyd, is now open at the Suncoast Hotel and Casino. Located in the former space of Salvatore’s Italian Restaurant, highlights of the décor are a wooden louvered façade and a 20-foot-long contemporary Murano glass chandelier. Featured starters are the seafood tower with Maine lobster, king crab, gulf shrimp, Atlantic scallops, little neck clams, mussels and calamari; and baked onion soup with caramelized onions, aged sherry, and gruyere. Prime cuts of filet mignon, ribeye, NY and Australian wagyu can be accompanied with peppercorn cognac cream, red wine, chimichurri, bearnaise and housemade steak sauces. Also on the menu are pan-roasted chicken breast with citrus beurre blanc, sea scallops with citrus corn puree and Pacific swordfish with little neck clams. Signature cocktails include the Stardust with Grey Goose vodka, passion fruit puree, Madagascar vanilla and fresh lime, named for the original home of William B’s Steakhouse before the casino implosion in 2006. • The popular Hawaiian-style concept Mo’ Bettahs Hawaiian Style Food, founded in Bountiful, Utah in 2008 by Kimo and Kalani Mack with a goal of providing guests with an authentic Hawaiian island barbeque experience like they enjoyed while growing up in O’ahu, Hawai’I, has opened its first Nevada location. Located in North Las Vegas near the Cannery Casino, guests can enjoy Hawaiian staples such as the traditional plate lunch with choice of grilled teriyaki chicken or steak, kalua pig, pulehu chicken, katsu chicken or shrimp tempura; paired with macaroni salad and steamed rice. This opening marks the brand’s 47th location nationwide, joining others in Utah, Idaho, Oklahoma, Texas, Missouri and Kansas. • The fast-casual restaurant chain Curry Pizza House, featuring a fusion of traditional Italian pizzas and Indian ingredients, has opened its first Las Vegas location at 4700 S. Maryland Pkwy. across from UNLV. Made with fresh house-made dough, the unique pizza creations include curry chicken masala with curry sauce, bell peppers and diced masala chicken; butter chicken with sweet shahi sauce, diced tomatoes and diced butter chicken; palak paneer with pesto sauce, spinach, masala paneer, ginger and garlic; and aloo chaat with house red sauce, marinated potatoes, mint and cilantro. Pizzas can also be customized with sauces including white garlic, curry and BBQ; and toppings such as chicken tikka, tandoori chicken and marinated gobhi. Also on the menu are traditional pizzas including pepperoni, cheese, veggie, cauliflower and gluten-free crust options; baked masala chips; and seven different flavor options of baked wings. Jayde at 16 is now open at the M Resort. Situated atop the 16th floor of the resort, the decor fetures floor-to-ceiling windows in the dining room and patio seating provide unobstructed views, hardwood flooring, wood paneling, lime green and brown leather seats, wraparound bar and lifelike video aquariums. Chef de cuisine Fon Littles describes her menu as Asian fusion with elements of Chinese, Korean, Vietnamese and Thai. Starters include Thai beef salad with cherry tomato, cucumber, mint, radish and tamarind soy dressing; and garlic fried calamari with sriracha mayo. Entrees include tonkatsu ramen with house-made braised pork belly, enoki mushroom and soft-boiled egg; pad Thai with rice noodles, chicken, shrimp, bean sprouts, crushed peanut and egg; tempura honey walnut prawns with candied walnuts and citrus honey sauce; cashew chicken with green & red peppers, chili, green onion and brown sauce; and braised bok choy with ginger, garlic, shiitake mushroom and carrot. • Ellis Island Selling Its Annual Holiday Nog
Ellis Island’s yearly Ellis Family Holiday Nog, now in its 21st year of commercial production, is now available for purchase. The dairy-based beverage was made with 2,000 eggs, 275 gallons of spirits, and a few secret ingredients to produce 5,800 bottles. The closely guarded family recipe has a tradition that began when Ellis Island owner Gary Ellis’ grandfather, Frank Ellis, Sr., learned about the recipe from a fellow passenger on a ship taking him from Italy to the US back in 1953. In the 1980s, after his grandfather passed away, Gary Ellis found the recipe and began making small batches in his home kitchen and is now produced at the company's Silver Reef Brewing Company in St. George, UT. The Holiday Nog is available by the glass ($10) or by the bottle ($40) and can be purchased until it’s sold out at Ellis Island Casino, the Mt. • ONE Steakhouse Offering Cowboy Steak Dinner During NFR
ONE Steakhouse, the acclaimed steakhouse by restaurateurs and brothers Michael Morton and David Morton at Virgin Hotels Las Vegas, will welcome rodeo fans during the 2023 Wrangler National Finals Rodeo (NFR) from Dec. 7-16 with its renowned 18-pound Tomahawk Feast. Serving 10 to 12 guests, the Feast includes a dry-aged, 18-pound USDA prime tomahawk steak carved tableside and served with six sides. It is priced at $1,400 and requires a 24-hour advance notice to order. Also offered is the cowboy cut steak, a 24-ounce USDA Prime Certified Black Angus bone-in ribeye, available exclusively during NFR. ONE’s menus also include surf and turf selections, 6-ounce Japanese Satsuma Wagyu, baked short rib rigatoni featuring whipped burrata, fennel-crusted salmon served with marble potatoes and lobster butter, a collection of bourbons and a vast wine cellar with highly-rated varietals from around the world.
 
• Buddy V’s Ristorante and Atomic Saloon Show Package
Buddy V’s Ristorante and Atomic Saloon Show, both at Grand Canal Shoppes at The Venetian, have joined forces to offer an exclusive dinner and show package for all performances Tuesday-Saturday evenings for the combined price of $200 per ticket. The menu includes a welcome cocktail, antipasto choice of Caesar salad, tomato & basil soup, Grandma’s meatballs, smoked ricotta, Toscano salad or calamari; entrée choice of rigatoni Bolognese, shrimp scampi, cavatelli con burrata, chicken fettuccine alfredo, grilled salmon, chicken piccata or chicken marsala; and dessert choice of cannoli, tiramisu or cookies & cream cheesecake. Showgoers have the option to dine pre- or post-show, with pre-show beginning at 5 p.m. available for the 9:30 p.m. show only.  Buddy V’s also offers the full menu for guests wishing to order other favorites. • LAVO’s Party Brunch Is Back
LAVO’s Party Brunch at The Palazzo has returned for the fall and winter seasons, running until the pool season resumes in March. Served every Saturday from noon-6 p.m. with the expansive terrace overlooking the Vegas Strip opening at noon and the main room at 1 p.m., new over-the-top offerings this year include waffle abbondanza—giant waffle brunch board filled with waffles, chicken, scrambled eggs, breakfast sausage, fresh fruit and all of the toppings; a giant flaming Dutch pancake with Cointreau-macerated peaches, seasonal fresh fruit and meringue; and the cornetto gigante—a royal icing glazed giant croissant with raspberries and gold leaf. For sipping with friends, the Candyland Chalice includes an entire bottle of Absolut Elyx Vodka, Pama Pomegranate Liqueur, pineapple, lemon, Fever Tree Pink Grapefruit and Fever Tree Ginger Beer presented in a giant ice snifter with assorted candy garnishes and cotton candy. • Indulge in Steak and Bourbon During National Finals Rodeo at CRUSH
CRUSH at MGM Grand will offer steak and bourbon flight specials during the National Finals Rodeo, available exclusively from Thursday, Dec. 7-Saturday, Dec. 16. The steak special is a 16-ounce Angus ribeye with shoestring potatoes and rosemary garlic butter, priced at $69. The bourbon flight, priced at $48, will showcase four expressions of Old Forester: 1870 Original Batch, 1897 Bottled in Bond Whisky, 1910 Old Fine Whisky and 1920 Prohibition Style. Rodeo fans can also get a taste of Las Vegas beer with local brewery draft options on the beverage menu including Able Baker Excited State Pilsner, Big Dog’s Las Vegas Lager, Las Vegas Brewing Penny O’Reilly’s Irish-style Ale and Tenaya Creek Bonanza Brown. Chef Shuffle

Chef/owner James Trees has named chef Sean O’Hara as executive chef of Esther’s Kitchen. O’Hara is the first chef to be named to this newly created position for the seasonal Italian restaurant in the Las Vegas Arts District. “Sean brings an incredible array of experiences, awesome creativity, and most of all the right mindset, making him the perfect choice for the first executive chef of Esther’s. We’re lucky to have him and excited for the future!” says chef Trees. A graduate of Johnson & Wales University, O’Hara’s resume includes significant time in the kitchens of New York’s legendary Jean-Georges and Del Posto as well as six years at Napa, CA’s legendary The French Laundry. In coordination with chef Trees, O’Hara will be leading the team as they transition to Esther’s new Main Street location in the next few weeks. Esther’s Kitchen, 1130 S.
